Organ Donation After Murder

I'm writing a short story, but I can't seem to find the answers to make it realistic. A person is murdered, and has signed that he/she is an organ donor upon death. Do her organs go to the hospital for harvesting immediately or do the police withhold the body for further analysis?

Also, would the police keep the body even though their is legal documents, stating that the organs must be harvested?
