toxic compounds or pathogens

For toxic compounds the appropriate samples would include:

blood
urine
liver
brain
bile

These would be screened by immunoassays or tlc for toxic compounds like drugs with gc-ms confirmation. Toxic metals like arsenic, lead or thallium would be identified by atomic absorption.

For pathogens the appropriate sample would usually be blood. Immunoassays would be used to look for antibodies against specific pathogens.
